SWEET POTATO CAKE 
1 1/2 c. sugar
1 c. oil
1 1/2 c. cooked mashed sweet potato
4 lg. eggs
1 tsp. vanilla
3 c. unsifted flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. raisins
1/2 c. coarsely chopped nuts

Heat oven to 350 degrees. Grease and flour a 10-inch tube or bundt pan. Beat sugar, oil and potato until fluffy. Beat in one egg at a time, adding vanilla with last egg. Beat in dry ingredients until combined. Fold in raisins and nuts. Turn batter into pan and bake 1 to 1 1/4 hours or until top tests done. Cool 5 minutes, remove from pan. Cool completely. Top with confectioners' sugar glaze, if desired.
