ZUCCHINI PICKLES 
4 qts. zucchini chunks or sliced
2 lg. green peppers
2 cloves garlic, chopped
6 med. onions, sliced
5 c. sugar
1/3 c. salt
1 1/2 tsp. celery seed
1 1/2 tsp. turmeric
1 1/2 tbsp. mustard seed
3 c. white vinegar

Mix zucchini, peppers, onions and garlic with salt. Let stand 3 hours with crushed or small cubes ice over top. Drain thoroughly. Heat to nearly boiling, sugar, vinegar and spices. Add zucchini mixture and heat to near boiling. Seal in hot jars.
