ZUCCHINI PICKLES 
5 lb. chunk zucchini
3 onions, sliced
1/2 c. salt
3 c. vinegar
3 c. sugar
2 tsp. celery seed
2 tsp. mustard seed
1 tsp. ginger
1/2 tsp. pepper
1/2 tsp. turmeric

Put ice over zucchini, onions, salt; let stand for 3 hours. Drain and rinse 2 times.

Bring to a boil the vinegar, sugar, celery seed, mustard seed, ginger, pepper and turmeric. Add zucchini chunks; heat. While hot, put in jars and seal.
