THE EVERYTHING MEAT MIXTURE | |
5 lbs. good quality chopped meat 2 good sized onions, chopped 2 garlic cloves, chopped 2 lg. eggs Seasoned bread crumbs Gravy Master Parsley Pepper Mix together meat, onions, garlic, eggs, small amount of Gravy Master. Add parsley and pepper to taste. Add seasoned bread crumbs until mixture holds together but is not dry. You can add any spices that you like. MEAT BALLS: Form mixture into small meatballs and bake in oven until cooked (at 350 degrees). Drain completely. Mix together 2 cans of cream of mushroom soup. (Can use any other creamed vegetable soup if you like) and some water. (Keep soup thick.) Heat. Saute a package of mushrooms and two large onions. Add a small amount of Gravy Master. Add to soup. Mix well. Add two bouillon cubes and 1/2 cup of sherry. Heat through and pour over meat balls. Simmer for half an hour on top of stove. MEAT LOAF: Form meat mixture into loaf. Add carrots and onions (chunked) around it. Top with sliced onions and sliced mushrooms. Top with small amount of tomato sauce. Bake at 350 degrees for 1/2 hour to 45 minutes until done. Should be firm and well cooked (about 45 minutes). SALISBURY STEAK: Form meat mixture into small loaves and brown in frying pan. Drain completely. Add your favorite brown gravy, fresh mushrooms and sliced onions. Add a small amount of sherry. Cover and cook until completely done. You can make the meat balls larger; add some sausage and Italian spices for a great spaghetti meat ball. |
