CHICKEN SALAD | |
1 1/2 c. unsweetened apple juice 1 1/2 lb. chicken pieces 1 1/2 c. seedless grapes, halved 1 sm. apple, chopped 1 stalk celery, chopped 1/2 c. slivered almonds 1/2 c. water chestnuts 1/2 c. pineapple chunks 3/4 c. mayonnaise 1/2 tsp. Mrs. Dash seasoning mix (original flavor) 1/8 tsp. cinnamon Simmer apple juice in deep saucepan. Add chicken, cook until tender. Cool. Remove skin and bones, dice chicken. Gently toss chicken with grapes, apple, celery, almonds, water chestnuts and pineapple. Combine mayonnaise, seasoning and cinnamon in small bowl; add desired amount to chicken mixture. Cover, refrigerate at least 30 minutes. |
