IRISH SODA BREAD | |
2 c. all-purpose flour 1 1/2 tsp. baking powder 1/4 tsp. baking soda 1 c. raisins 1 tsp. caraway seeds 1 c. buttermilk 1/2 tsp. salt Preheat oven to 375 degrees. Mix flour, baking powder, caraway seeds and salt in a large bowl. Rinse and cook raisins, approximately 5 minutes. Drain the raisins and add to flour mixture. Stir until coated well. Mix baking soda in buttermilk and add to flour and raisin mixture. Stir thoroughly. Form dough mixture into a ball and put on a floured surface. Knead approximately 1/8 to 1/4 cup flour into ball. Put into greased baking pan and cut a large cross deep into the middle of dough which was slightly flattened with the palm of the hand. Bake 40-45 minutes until medium brown. Enjoy. |
