RAW APPLE CAKE 
1 3/4 c. sugar
1 c. oil
3 eggs
1/2 tsp. salt
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
8 apples, sliced
1 c. chopped nuts

Mix all ingredients by hand except nuts and apples. Do not beat. After mixing well, add apples and 1/2 cup nuts, mix well. Sprinkle with remainder of nuts. Bake at 350 degrees for 45 minutes in ungreased pan 13x9x2 inch. When cooled, sprinkle powdered sugar or serve plain. Delicious with ice cream.
