SUFFERN INN SALAD | |
6 tbsp. mayonnaise Juice of 1 lemon 1 sm. onion, finely minced (or 2 tbsp. minced chives) 2 c. frozen peas (not thawed) 1 1/2 c. Swiss cheese strips Salt and pepper to taste 2 c. torn lettuce (bite size) 8 slices crisp crumbled bacon 24 hours before serving, combine mayonnaise, lemon juice, onion, peas and cheese strips in a bowl. Mix well and add salt and pepper to taste. Cover and refrigerate. Before serving, add lettuce and bacon. Toss well. Prepare 24 hours before and follow directions carefully. |
