SUFFERN INN SALAD 
6 tbsp. mayonnaise
Juice of 1 lemon
1 sm. onion, finely minced or 2 tbsp. chives
2 c. frozen peas, do not thaw
1 c. Swiss or cheddar cheese strips
Salt & pepper to taste
2 c. lettuce, torn into bite-size
8 slices crisp crumbled bacon

Twenty-four hours before serving, combine the mayonnaise, lemon juice, onion, frozen peas, and cheese strips in a bowl. Stir well. Add salt and pepper to taste; cover and refrigerate. Before serving, add lettuce and bacon, toss well and taste again.

NOTE: This salad must be prepared 24 hours before serving. It is most unusual and thoroughly delightful.

The secret to this salad is the way in which it is assembled. A layer of shredded iceberg lettuce a layer of finely sliced onion sprinkled with sugar, frozen peas then dressing. Cover with cheese and seal edges.Place in frig overnight. Salad is very crisp and delicious. Also a beautiful salad especially with purple onions. Thanks.
