POTATO CASSEROLE 
1 (2 lb.) pkg. frozen hash browns
2 c. grated cheddar cheese
1/2 c. chopped onion
1 lg. container sour cream
1 can cream of chicken soup
1 can cream of celery soup
Chopped pimento, optional

Mix all ingredients together and pour into a large casserole dish. Crush a roll of Ritz crackers and spread on top. Cut a stick of butter into pats and place on top of crackers. Cover with foil and bake 1 hour at 350 degrees. Uncover and bake 15 minutes more. Freezes well.
