OVEN APPLE PANCAKE 
2 apples (Macs are good)
2 tbsp. brown sugar
2 eggs
1/4 c. sugar
5 tbsp. butter
1 tsp. lemon juice
1/2 tsp. cinnamon
1/2 c. plus 2 tbsp. flour
1/2 c. plus 2 tbsp. milk

Preheat oven to 425 degrees.

Cut apples into slices and toss with lemon juice, brown sugar and cinnamon; set aside.

In a 10 inch pie plate melt butter (in microwave is easiest).

Combine eggs, flour, sugar and milk; beat lightly, the batter will be lumpy. Pour batter into pie plate over melted butter. Top with apple mixture.

Place in preheated oven and bake for 25 minutes until puffed and golden brown. Serve with maple syrup.

My daughters love this for dinner - it's so easy for mom too!

Since microwave ovens vary in power, you may need to adjust your cooking time.
