CUBED CUCUMBER PICKLES | |
1 peck of cucumbers - wash, cut off ends, chop coarse with blender - drain. Soak in 1/2 cup salt covered with cold water. Soak for 6 hours - drain. To make syrup: 5 c. sugar 3 c. vinegar 1 1/2 tsp. mustard seed 1 1/2 tsp. celery seed Put on stove, when comes to a rolling boil add cucumbers. Let boil 20 minutes, stirring constantly, then start filling sterilized jars and seal. All finished, you have cubed pickles for salads. |
