FIESTA CASSEROLE 
1 lb. lean ground beef
1 (1 1/4 oz.) pkg. taco seasoning mix
1 (16 oz.) can refried beans
1 (11 oz.) can nacho cheese soup
1 c. (4 oz.) shredded Monterey Jack cheese
1/2 c. pitted black olives, sliced
1 c. sour cream
2 green onions, minced
Round corn tortilla chips

1. In microwave safe 2 quart casserole, cook meat on High 5 minutes, stirring after 2 minutes. Drain off fat; place meat in bowl. Add taco seasoning mix; stir until combined.

2. In bottom of casserole, spread beans, cover and beef mixture. Pour soup over meat to within 1" of edge of dish. Sprinkle with cheese and then olives. Cook on High 15 minutes, or until cheese melts and mixture is bubbly. Place sour cream over cheese at one side of casserole; sprinkle with green onions. Arrange tortilla chips around edge of dish. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
