SAUSAGE CASSEROLE 
3 lb. Italian sweet sausage (can mix in hot also, if desired)
8 carrots
4 to 6 potatoes

All amounts can be adjusted to family size.

Cut sausage into pieces (about 2 pounds). Cut carrots and potatoes into nice serving pieces. Put all into a roaster.

Bake, covered, in 275°F to 300°F for about 4 hours. Check and mix occasionally, so sausage browns. Remove cover the last half hour. Simple and tasty.
