ITALIAN NUT BALLS 
3/4 c. sugar
3/4 c. soft butter
1 tsp. salt
2 egg yolks
1/2 tsp. vanilla
1/2 tsp. almond extract
2 c. flour

Combine all ingredients except flour. Mix for 1 minute. Then add at low speed the flour. Roll dough into 1 inch balls and dip into 3 egg whites beaten softly then into crushed finely walnuts about 1 1/2 cups.

Place on greased cookie sheets 2 inches apart in 350 degree oven for 10 to 15 minutes until firm and lightly brown. Make depression in center while warm and fill center with your favorite preserves. Yield 3 to 4 dozen.
