BURRITO HAT 
2 tbsp. butter
1/2 c. grated cheese
1 tsp. buttermilk dressing
2 tsp. picante sauce
1 egg, scrambled
1 flour tortilla
1 tbsp. green onion, diced
1 tbsp. green pepper, diced
1 tbsp. precooked mushrooms, diced
Dash of red pepper, crushed
Dash of celery salt

Prepare all ingredients in advance. Melt butter in skillet on moderate low heat. Pour egg into skillet; as bottom hardens, add red pepper, celery salt, green pepper, mushrooms, green onion, and grated cheese. When cheese begins to melt, add buttermilk dressing and picante sauce.

In a separate skillet, heat flour tortilla. Cover egg mixture with tortilla, seal edges, then flip. Fold in half. Continue to heat until slightly brown. Serve hot.
