BURRITO PIE 
1 1/2 c. mashed potatoes
1/2 (1 1/4 oz.) pkg. taco seasoning (about 2 tbsp.)
1/4 c. chopped onion
2 tbsp. water
1/2 (16 oz.) can refried beans (1 c.)
1/4 c. shredded Cheddar cheese
1/4 c. chili sauce
Dash of pepper
1/4 c. coarsely crushed corn chips
Lettuce and tomatoes

Combine mashed potatoes and 1 tablespoon of taco seasoning in 9-inch microwave- safe pie plate. Spread evenly over bottom and up sides of dish. Set aside. Combine onion and water in 1-quart microwave-safe casserole.

Microwave (high), uncovered, 1 1/2 to 2 1/2 minutes or until onion is tender. Stir in refried beans, cheese, chili sauce, pepper, and 1 tablespoon taco seasoning. Spoon evenly over potatoes. Cover with waxed paper.

Microwave (high), 6 to 7 minutes or until heated through (150 degrees), rotating dish once. Sprinkle with chips. Garnish with chopped lettuce and tomato.

Use leftover mashed potatoes or follow package directions for instant potatoes.

Freeze remaining refried beans for later use.

Since microwave ovens vary in power, you may need to adjust your cooking time.
