HUMMING BIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 1/2 c. salad oil
1 1/2 c. vanilla
1 (8 oz.) crushed pineapple
2 c. crushed bananas
1 c. pecans, chopped

Mix well. Do not use electric mixer. Pour into well greased and floured 9 inch round cake pans (3). Bake at 350 degrees for 45 minutes or until toothpick in middle of cake comes out clean. Test at 35 minutes.

ICING:

1 (8 oz.) pkg. cream cheese, softened
1 stick butter, softened
1 box powdered sugar
1 tsp. vanilla flavoring
1 c. chopped nuts

Cream cheese and butter together. Add powdered sugar and beat with electric mixer until smooth. Add vanilla and nuts; stir well. Frost sides and top of cooled layers.
