HUMMING BIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
2 c. chopped bananas
1 c. chopped nuts
1 tsp. cinnamon
1 1/2 c. vegetable oil
3 eggs
8 oz. can crushed pineapple, including juice

Grease and flour 10 inch tube or bundt pan. In a large mixing bowl sift flour, sugar, salt, soda, and cinnamon. Add remaining ingredients and stir until mixed. (Hand mix only). Pour into pan and bake 1 hour and 10 minutes.

Cool on cake rack 25 to 30 minutes.

ICING:

8 oz. pkg. cream cheese, soft
1 stick butter, soft
1 tsp. vanilla
1 box powdered sugar

Beat cheese, butter and vanilla until light. Add sugar slowly and continue to mix. Spread over cake.

NOTE: The above icing recipe makes more than adequate amount of icing. Ingredients can be halved if a lesser amount is desired.
