HUMMING BIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
3 eggs, beaten
1 1/2 c. oil
2 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple
2 c. bananas, chopped
2 c. chopped pecans
1 stick soft butter
1 (8 oz.) pkg. cream cheese
1 lb. box powdered sugar
1 tsp. cinnamon

Combine flour, sugar, soda, salt and cinnamon in a bowl. Add eggs and oil, stirring just until moistened. Stir in 1 1/2 teaspoons vanilla, pineapple, bananas and 1 cup pecans. Spoon into 3 well greased 9 inch cake pans. Bake at 350 degrees for 25-30 minutes or until cakes test done. Cool in pans for 10 minutes before removing to completely cool.

Icing: Cream butter and cream cheese in bowl. Beat in powdered sugar gradually. Stir in 1 teaspoon vanilla and 1 cup pecans. Spread between layers and over top and side of cake.
