NEW YORK CHEESECAKE 
1/3 c. sugar
1 1/4 c. graham crumbs
1/4 - 1/2 c. melted butter
16 oz. pkg. cream cheese
1 c. sugar
1 tsp. vanilla
1 c. sour cream
1 tsp. lemon juice
5 lg. eggs, separated
Strawberries (optional)

Preheat oven to 300 degrees. Mix sugar, butter, and graham crumbs. Press into a 9 inch spring-form pan on bottom and sides. Beat cream cheese and sugar. Add 5 egg yolks, vanilla, lemon juice, and sour cream. Mix well. Fold in 5 stiffly beaten egg whites. Bake 1 hour at 300 degrees. Turn off heat; leave in oven 1 hour with door shut. After 1 hour, open door; leave in 30 minutes. Chill overnight. May make berries into puree.
