GREEN CHILI SOUFFLE 
6 to 8 eggs, beaten
1 can evaporated milk
2 c. grated Jack cheese
2 c. Cheddar cheese
3 tbsp. flour
1 can Ortega's chopped green chiles
Salt and pepper

Beat eggs, milk and flour together and Jack cheese. Fold together and pour into buttered 2 quart casserole. Sprinkle grated cheese over top. Bake, covered, approximately 1 hour. Serve immediately.
