STIR-FRIED BEEF WITH ONIONS 
1 lb. flank steak
1 tbsp. pale dry sherry
1/2 tsp. salt
Black pepper
2 tbsp. soy sauce
1 tsp. sugar
1/4 c. oil
2-3 slices ginger root
1 lg. onion, sliced
3 cloves garlic, minced
1 1/2 tsp. cornstarch dissolved in 3 tbsp. beef stock

Cut steak against the grain and marinate 15 minutes in sherry, salt, pepper, soy sauce, sugar and 1 1/2 teaspoons oil. Heat remaining oil and add ginger and onion. Add steak and garlic. Stir-fry briefly. Add onion. Fry 1 minute. Add cornstarch mixture and cook 30 seconds.
