SWEET POTATO PIE 
3 lbs. sweet potatoes
4 tbsp. butter, room temperature
3 eggs, lightly beaten
1 c. sugar
1 tsp. vanilla
1 tsp. nutmeg
1 tbsp. lemon juice
1/2 c. bourbon or rum
1 tbsp. flour
Pastry for 1 crust pie

NOTE: If you desire, you may substitute 1/2 cup milk and optional rum flavoring for the 1/2 cup bourbon or rum.

Boil sweet potatoes in water to cover until tender, or bake until done. Peel while still hot. Place in a large mixing bowl. Add butter, eggs, sugar, seasonings, and bourbon. Blend until smooth, then beat with wire whisk until light and airy.

Prepare pastry in a 9 inch pie plate. Sprinkle pastry evenly with flour and pour in potato mixture. Place in a preheated 450 degree oven. Turn heat immediately to 300 degrees and bake for 45 minutes or until a knife comes out clean.
