GERMAN POTATO SALAD 
8 lg. boiling potatoes
3 med. onions, sliced thin
Salt, pepper, celery seed
1 tbsp. mixed dried herbs (savory, basil and marjoram - optional)
3/4 c. vinegar
3/4 c. salad oil
1/4 tsp. sugar

Boil potatoes in jackets until barely done. Drain and peel immediately. In large bowl arrange thinly sliced potatoes and onion slices in layers, sprinkling salt, pepper and celery seed over each layer and, if desired, herbs.

In saucepan bring vinegar, oil and sugar to a boil; pour immediately over potatoes. Mix carefully and serve warm, at room temperature or chilled. Serves 10-12.
