INFALLIBLE RICE 
1 medium onion, minced
2 tbsp. butter
2 c. chicken broth or wine (or combine both)
1/2 c. sliced mushrooms (optional)
1 c. long-grain rice (raw)

Sauté onion and mushroom until "limp" in butter. Add rice and broth. Bring to a boil; cover and bake in 350°F oven for 20 minutes.
