2 c. whole wheat flour
1 c. sugar (can use less)
1/4 c. toasted wheat germ
1 c. brown sugar
1 tsp. cinnamon
1 c. chopped walnuts
1 tsp. salt
2 beaten eggs
1/2 tsp. nutmeg
1 tsp. vanilla
4 c. peeled and diced apples
1/2 c. oil
2 tsp. baking soda

Mix together all dry ingredients. Set aside. In large bowl combine peeled and diced apples, sugars, oil, walnuts, eggs and vanilla. Add flour and stir gently. Blend well.

Turn into 13x9 pan. Bake in 350 degree oven for 50 minutes or until cake pulls from side of pan. Cool in pan on rack. If desired, sprinkle with confectioners' sugar.
