CHICKEN ENCHILADA SUPREME 
1 (13 oz.) can chunk chicken
1 lg. avocado, diced
1 lb. Longhorn cheese
1/2 onion, diced
12 flour tortillas
1 (16 oz.) can enchilada sauce

Set aside part of the cheese. Mix chicken, avocado, cheese and onion. Put 1/12 of mixture on tortilla; roll up and arrange in 9x13 inch baking dish. Top with enchilada sauce and reserved cheese. Bake in 350 degree oven until cheese melts.
