SPINACH CASSEROLE 
3 c. cooked spinach
4 tbsp. minced onion
1/2 tsp. salt
1/4 tsp. pepper
2 eggs, slightly beaten
1 c. milk
1/2 c. dry bread crumbs
2 tbsp. butter

Combine spinach, onion, salt and pepper. Stir eggs into milk and add to spinach mixture. Pour into greased casserole, sprinkle with crumbs, dot with butter and bake in hot oven at 450 degrees for about 15 minutes or until browned. Serves 6. Garnish, if desired, with sliced hard-boiled eggs.
