SPINACH TOMATO CASSEROLE NORFOLK 
2 pkg. frozen spinach, cooked and drained
2 lg., firm tomatoes, sliced
1/2 tsp. garlic powder
1/4 c. bread crumbs
1/3 c. chopped green onions
4 tbsp. butter
1/4 tsp. salt
1/3 c. Parmesan cheese
1/2 tsp. thyme
2 eggs, beaten

Preheat oven to 350 degrees. Slice tomatoes and place on bottom of flat casserole dish. Sprinkle with garlic powder. Mix together the crumbs, green onions, butter, salt, thyme, and eggs. Add spinach and pour over tomatoes. Sprinkle with Parmesan cheese. Bake for 15 minutes.
