HURRICANE MUFFINS 
1/4 c. shortening
1 c. sugar
1 egg
2 c. flour
1/3 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
1 c. pared, chopped apples
1/2 c. milk
1/4 c. chopped raw cranberries, nuts, raisins or prunes

Cream shortening with sugar. Add well beaten egg. Sift dry ingredients together. Add fruit, chopped to dry ingredients. Blend milk with shortening, sugar and egg. Then add floured mixture to it. Pour into well greased loaf pan or muffin tins. Bake 50 minutes at 350 to 375 degrees.
