PEPPER STEAK 
2 lbs. round steak
1/2 c. onion chopped
4 green pepper, cut in thin strips
1 1/2 tsp. salt
2 cans consomme, concentrated
1/4 c. water
1/2 c. butter
2 cloves garlic, chopped
1 c. celery, cut small
1/4 tsp. pepper
2 tbsp. cornstarch
4 tsp. soy sauce

Cut steak in thin strips. Heat butter in skillet; add meat and brown well. Add onion, garlic, green peppers, celery, salt, pepper and consomme. Cover and cook gently for about 1 hour. Blend cornstarch with water and soy sauce. Cook uncovered for 15 minutes. Serve over rice.
