OATMEAL APPLE MUFFINS 
1 1/3 c. all-purpose flour
1 c. oats, uncooked
1/3 c. brown sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 c. milk
1/3 c. apple juice
1/4 c. vegetable oil
1 egg, beaten
3/4 c. peeled, chopped apple (about 1 med.)
1/2 c. raisins

Heat oven to 400 degrees. Grease 12 medium muffin cups or line with paper baking cups. Combine dry ingredients. Add combined remaining ingredients except apple and raisins, mixing just until moistened. Gently fold in apples and raisins. Fill prepared muffin cups 2/3 full. Bake 20 to 22 minutes or golden brown. Yield: one dozen.
