JOHNNY APPLESEED PANCAKE 
1 small green apple
1 tbsp. sugar
1/2 tsp. cinnamon
2 tsp. butter
2 eggs, separated
1/4 cup skim milk
1 tbsp. all-purpose flour
1/4 tsp. nutmeg
1/4 tsp. baking powder

Cut apple into thin slices and toss with half of sugar and cinnamon.

In 1-inch non-stick ovenproof skillet, melt butter. Arrange apple slices over the bottom. Cook over low heat for 5 minutes. Beat egg whites until soft peaks form. Add remaining sugar, then beat until firm and glossy.

In small bowl, beat together egg yolks, milk, flour, nutmeg, and baking powder. Fold yolk mixture into egg whites. Pour batter over apples.

Bake at 400°F for 12 minutes.

Serves 2.

This is a delicious breakfast or brunch item. I think think acknowledgement needs to be given to Richard Simmons. It is from his Deal-a-Meal cookbook of 1987. Just wish it wasn't out of print; mine is falling apart.
