BEST EVER MUFFINS 
1 3/4 c. flour
2 tbsp. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg, well beaten
3/4 c. milk
1/3 c. cooking oil or melted shortening

Sift together dry ingredients; make well in center. Combine egg, milk, and oil. Add all at once to dry mixture. Fill greased cupcake pans or use paper baking cups in cupcake pan. Fill 2/3 full. Bake at 400 degrees for 25 minutes. Makes 12. To have peaked muffins, leave batter stand 5 minutes before filling cupcake pans.
