LEMON PIE 
1 c. sugar
1/3 c. cornstarch
1/4 tsp. salt
2 c. water
3 egg yolks, beaten
2 tbsp. butter
2 tsp. grated lemon rind
1/3 c. lemon juice

Mix sugar, cornstarch, and salt in pan. Gradually stir in water. Cook over medium heat, stirring constantly until thick, then cook 1 minute longer. Remove from heat, stir in egg yolks. Cook 1 minute. Remove from heat and add rest of the ingredients. Pour into a baked pie shell and top with meringue. (See recipe for meringue.)
