PEANUT BRITTLE | |
2 c. sugar 1/2 c. light corn syrup 2 c. unsalted peanuts 1 tsp. butter 1/4 tsp. baking soda 1 c. water Combine sugar, corn syrup and 1 cup water in a medium saucepan. Stir oven low heat until sugar is dissolved. Continue cooking, without stirring, to 238 degrees on candy thermometer, or until a little in cold water forms a soft ball. This takes about 15 minutes. Add peanuts. Cook until syrup turns golden (about 10 minutes). Add butter and baking soda, stirring just enough to mix. Pour onto greased cookie sheet forming a large square of brittle. Cool, then break into pieces. |
