BROCCOLI, CHEESE & RICE
CASSEROLE
 
2 bags frozen broccoli pieces
1 stick butter
1 can undiluted mushroom or celery soup
1 c. cooked white rice
1 med. onion, chopped
1 stalk celery, sliced
10 mushrooms, sliced
Velveeta cheese slices

Melt butter and simmer with onion, celery, and mushroom slices. Pour uncooked broccoli slices into large (10 inch) casserole dish. Add undiluted soup, cooked rice, and butter mixture; stir well. Cover or top with 4 slices Velveeta cheese. Bake with cover 1/2 hour at 350 degrees. Top again with 4 more slices Velveeta cheese after stirring well. Bake another 1/2 hour at 350 degrees covered.
