1 sm. pkg. butterscotch pudding mix (not instant) 1 c. granulated sugar 1/2 c. brown sugar, packed 1/2 c. evaporated milk (not diluted) 1 tbsp. butter 1 1/2 c. chopped pecans Combine first 5 ingredients in saucepan and cook over low heat. Stir until sugar dissolves. Add nuts and cook to soft ball stage. Beat until thickened, but still shiny. Drop by spoonfuls onto wax paper. If mixture becomes too thick, it may be softened by heating over hot water and adding a few drops of evaporated milk. |
