BEET PICKLE 
1-2 qts. beets
1 c. vinegar
1 c. sugar
1 c. water
Salt
1/2 tsp. allspice

Wash beets, put in water and boil until skins slip off. Cut beets in small pieces. Mix vinegar, sugar, water, spice, and salt and heat to boil. Add beets. Boil 10 minutes. Put beets and juice in jars and seal.
