PEPPER AND CHEESE SQUARES 
All the ingredients of a quiche, without the fuss of a crust.

1/2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
8 eggs
3 c. shredded Monterey Jack cheese (12 oz.)
1 1/2 c. cream-style cottage cheese
3 or 4 pickled jalapeno peppers, rinsed and chopped (about 2 tbsp.)
2 tbsp. chopped pimiento
2 tbsp. sliced, pitted ripe olives
Tortilla chips (optional)

In a bowl stir together flour, baking powder, and salt, then set aside. In large mixer bowl beat eggs with an electric mixer until well combined. Stir flour mixture into beaten eggs and mix well. Fold in Monterey Jack cheese, cottage cheese, peppers, pimiento, and olives.

Pour into a greased 13 x 9 x 2 inch baking dish. Bake in a 350 degree oven about 40 minutes or until set and golden brown. Let stand 10 minutes. Cut into about 1 1/2 inch squares. Serve warm on tortilla chips, if desired. Makes about 48.
