SHOE PEG CORN CASSEROLE 
1/2 c. chopped onion
1 c. chopped celery
1/2 c. chopped bell pepper
1 c. grated cheese (mild cheddar)
1 can whole kernel corn
1 can French style string beans, drained
1 can cream of celery soup
1/2 pt. sour cream
Salt & pepper to taste
1 stick butter
1 stack Ritz crackers

Mix all ingredients except Ritz crackers and butter. Stir and pour in greased 9"x13" baking dish. Melt butter and crunch Ritz crackers and mix together. Sprinkle over top of casserole. Cook on High 10 to 12 minutes. If a bit too soupy, microwave another 2 to 3 minutes.

May use frozen vegetables, cook separately before mixing other ingredients.

Since microwave ovens vary in power, you may need to adjust your cooking time.
