1 c. butter, softened 1 c. sugar 2 eggs, well beaten 1 1/2 c. all-purpose flour 1/2 tsp. salt 1 c. pecans, chopped 1 tsp. vanilla extract Pecan halves Combine butter and sugar, creaming until light and fluffy. Add eggs, beating well. Add flour and salt, and mix until smooth; stir in chopped pecans and vanilla, mixing well. Drop dough by 1/2 teaspoonfuls about 2 inches apart on greased cookie sheets. Place a pecan half in center of each cookie. Bake at 375 degrees about 8 minutes or until lightly browned. Yield: 6 dozen. |
