FRESH VEGETABLE KABOBS | |
1/2 c. salad oil 1/4 c. lemon juice 1 lg. clove garlic, minced 1 tsp. salt 1/2 tsp. oregano 1/2 tsp. thyme 1/8 tsp. pepper 2 c. med. whole fresh mushrooms 2 sm. zucchini squash, cut in 1 inch slices 6 cherry tomatoes 6 sm. whole white onions, cooked and drained 1 med. pepper, cut in 1 inch squares To make marinade, in shallow dish, combine oil, lemon juice and seasonings; add vegetables. Chill 4 hours or more; stir occasionally. Drain vegetables, reserving marinade. On 6 skewers arrange vegetables alternately. Broil 4 inches from heat about 8 minutes, or until done, turning and brushing with marinade. Makes 6 servings. |
