FRIED POLK SALAD | |
Polk salad Salt to taste 1 c. vegetable oil 6 eggs Wash polk salad stems in sink with warm water. Put in bit pot and parboil until it changes color and is tender. Watch carefully, it will boil over. Rinse in cold water until it rinses clean and clear. Add salt. Put 1 cup oil in a black skillet and let it cook down. Add 6 eggs. Scramble all up together until the eggs are done. |
