SPINACH - CHEESE BAKE 
1 (6 oz.) pkg. corn muffin mix
2 eggs, beaten
1 (8 oz.) carton sour cream
1 (10 1/2 oz.) can onion soup, undiluted
1 (10 oz.) pkg. frozen chopped spinach, thawed & drained
1/2 c. butter, melted
1/2 c. shredded cheddar cheese

Combine first 6 ingredients. Stir until blended. Spoon into a greased 12 x 8 x 2 inch baking dish. Bake at 350 degrees for 25 minutes. Top with cheese and bake 5 minutes.
