SEVEN-UP CAKE 
Cake:

1 box Lemon Supreme Cake mix
1 box pineapple instant pudding mix*
1/2 c. cooking oil or 3/4 c. Crisco oil
4 eggs (keep 2 egg whites if 7 minute frosting is used)
1 bottle 7-Up (10 oz.)

Mix and bake in 3 layers at 350°F for 25-30 minutes.

*One box of vanilla instant pudding mix may be used and about 4 tablespoons of crushed pineapple.

Filling:

1 stick butter
1 small can crushed pineapple
2-3 eggs
1 1/2 c. sugar
1 can coconut
1 tsp. flour, optional

Mix butter, pineapple, eggs, sugar, and flour if desired. Cook until thick, add can of coconut, place between layers and on top of cake.
