SQUASH CASSEROLE 
1 lb. zucchini, cut in chunks
1 sm. onion, thinly sliced
4 eggs
3/4 c. grated Swiss cheese
3/4 c. grated Cheddar cheese
1/2 tsp. each oregano and basil
Salt and pepper to taste

Steam zucchini and onions until soft. Beat eggs. Add cheeses. Drain and mix onions and zucchini and add to egg mixture. Add spices and pour into lightly greased casserole and bake at 325 degrees for 35-40 minutes. Makes 4-6 servings.
