PURPLE PICKLED EGGS 
1 c. beet juice, not pickled
1/2 c. sugar
1/2 c. vinegar

Bring beet juice to a slow boil. Add sugar and vinegar. Simmer until sugar is dissolved. Pour over hard boiled eggs (12). Put in glass jar and let set for a few days.
