THE PERFECT OMELET | |
2 eggs 2 tbsp. water 1/8 tsp. salt Dash of pepper 1 tbsp. butter FILLING: Any of the following: Onion, chopped Bacon or ham, chopped Green pepper Picante sauce In mixing bowl, whisk together eggs, water, salt and pepper. Heat to very hot on nonstick 8 inch or 10 inch skillet with sloping sides; add butter and quickly put in egg mixture. Tilt pan, move cooked egg so uncooked egg can reach hot surface. Sprinkle filling of choice over 1 side of omelet. Slip spatula under omelet and fold over the filling. |
